This slow cooker pot roast recipe is easy to make, and makes for a perfect busy weeknight dinner for a big family. It’s hands-off and can be prepped in the morning and will be ready by the time you get home for dinner.

Everyone is familiar with pot roast. So familiar, that I put off sharing my recipe for years because I figured everyone already knows how to make it!

Well, maybe you do. Or, maybe you’re here for a refresher. Or, maybe you’re here to learn how to make the absolute best crockpot pot roast.

This is my favorite easy slow cooker recipe, hands down. And that’s saying something!

My crock pot lives on my counter at the moment. As a full-time conservatory student, blogger, business owner, and mom of 3, it gets a ton of use.

As a matter of fact, I’m sure you noticed that my crockpot no longer even has a knob. It’s seen better days, for sure.

Perhaps the absolute best thing about pot roast, is that it’s a full meal all in one. I don’t have to come home and make a pot of rice or a vegetable side. It’s simply made in the morning, and ready to serve my family by the time I get home in the evening.

There are many ways to make pot roast. Today I’m going to share the basic, most classic version. It’s tender, juicy, and full of flavor.

No onion soup mix packets or red wine this time.

Just a simple crock pot roast with potatoes and carrots, and a delicious gravy.

FAQs about making pot roast

No, you don’t have to brown your roast before putting it in the crock pot. But, I definitely recommend it. It adds a ton of flavor, and the flour coating is what helps the gravy thicken and come together.

Yes, but not very much. If you add too much broth or liquid, you’re missing out on the flavor of the natural juices. 1/4 cup of beef broth is perfect! You can go up to 2 cups if you really want a ton of liquid to make a gravy later.

It’s best to cook roast on the low setting in a crock pot, because it’s a tough cut of meat. Cooking it on high will get the job done, but you’ll lose out on some flavor and tenderness if you rush the process.

How to Make Slow Cooker Pot Roast

Just a few ingredients

  • 3-5 lb chuck roast
  • 2 tbsp vegetable oil
  • 2 tbsp salt
  • 1 tsp black pepper
  • 1/3 cup flour
  • 2 lbs potatoes, washed and cut into large chunks
  • 5 large carrots, peeled and cut into large chunks
  • 1 onion, cut into large chunks
  • 3 stalks of celery, cut into chunks
  • 2 tsp thyme
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 3 tbsp garlic (whole cloves are amazing in this recipe)
  • 1/2 cup beef broth
  • 2 tsp cornstarch

Step 1: Coat the roast in salt, pepper, and flour

Coat your roast in salt, pepper, and flour, and brown it on a skillet on medium heat.

Step 2: Cut up veggies and add to slow cooker

Cut up all of your veggies and add it to the crock pot.

Step 3: Add seasonings to the crock pot

Add all seasonings and mix the veggies up. Add the beef broth as well.

Step 4: Place the roast on top of the veggies

Place the roast on top of the veggies and set the crock pot to low.

Step 5: Shred the pot roast and make gravy

Remove the roast and most of the veggies.

In a small bowl, mix together 2 tbsp cornstarch and 2 tbsp cold water. Once your cornstarch slurry is fully incorporated, add it to the broth in the crockpot and mix to combine.

This is now your gravy!

I do skip this step when things are too busy, but it’s just too yummy to miss most of the time!

  • 35 lb chuck roast
  • 2 tbsp vegetable oil
  • 2 tbsp salt
  • 1 tsp black pepper
  • 1/3 cup flour
  • 2 lbs potatoes, washed and cut into large chunks
  • 5 large carrots, peeled and cut into large chunks
  • 1 onion, cut into large chunks
  • 3 stalks of celery, cut into chunks
  • 2 tsp thyme
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 3 tbsp garlic (whole cloves are amazing in this recipe)
  • 1/2 cup beef broth
  • 2 tsp cornstarch

Instructions

  1. Coat the roast in salt and pepper, and then flour.
  2. Heat a skillet with vegetable oil on medium heat.
  3. Sear all sides of the roast until golden brown.
  4. Chop up all veggies and add to crock pot
  5. Add seasonings and beef broth to crock pot and mix.
  6. Add seared roast on top of the veggies, and set crockpot to cook on low for 6-8 hours.
  7. Once done, remove the meat and vegetables. Create a cornstarch slurry by whisking together 2 tbsp of water and 2 tbsp cornstarch. Once fully mixed, add slurry to the broth in the crockpot and whisk together until incorporated. This is now your savory gravy to pour over the roast and veggies.

  • Searing the chuck roast before adding it to the crockpot adds a ton of flavor.
