Soup is one of my greatest loves in life.

And, I don’t know why, but making them really intimidated me for the longest. It turns out, they’re actually really easy to throw together.

In fact, it’s actually kind of hard to mess up soup. You mostly just want to let it simmer and have the flavors all come together.

You can add virtually anything to a soup, even this one!

This recipe calls for spinach, but you can absolutely substitute it for kale, or even zucchini.

I’ve made many different tortellini soups over the years. You can cook them in the Instant Pot, the crock pot, and of course, on the stove top.

Creamy tortellini soups with Italian meatballs is one of my favorites, but I’ll save that one for another day.

Today I’m sharing how I make make creamy tortellini soup with spinach and tomatoes.

  • Use up whatever vegetables you have that need to be used. It comes out amazing every time!

I love serving this soup with a little parmesan cheese sprinkled on top, and with garlic bread and a side salad.

Actually, no. I’ve frozen many cooked meals in the past, and this specific recipe did not reheat well. The tortellini came out mushy. However, if you’re really looking to cook in bulk, I would suggest cooking everything except for the tortellini, and freezing that separately. Then, once reheating, add the frozen tortellini at the end.

Absolutely! You can follow the directions below, and don’t forget to saute the vegetables and brown the meat in a skillet before adding it all to the crock pot. Save the spinach, cream, and tortellini for the end of the cooking time.

Yes! I love making meatball tortellini soup. You can brown them before preparing the soup (similar to the recipe below), but to keep things simple, I usually skip that step and simply throw frozen pre-cooked meatballs in as the soup is simmering.

How to Make Tortellini Soup with Italian Sausage

Just a few ingredients

  • 1 lb Italian sausage
  • 3 large carrots, chopped
  • 1 medium onion, diced
  • 3 tbsp minced garlic
  • 1 tbsp Italian seasoning
  • 1/3 cup flour
  • 6 cups chicken broth
  • 28 oz can of diced tomatoes
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • Salt & pepper to taste
  • 10 oz spinach
  • 9 oz three cheese tortellini
  • Optional: parmesan cheese on top

Step 1: Brown the Italian Sausage

Step 2: Chop your veggies

While the Italian sausage is cooking, dice your onion and peel and chop the carrots.

Step 3: Remove the Italian sausage and cook the veggies

Add the seasonings to the pot with the veggies and cook until the onions are transluscent.

Step 4: Add flour to the pot

Stir and allow to cook for about 3 minutes.

Step 5: Add chicken broth and canned tomatoes to the pot

I use Better Than Bouillon and highly recommend! Allow to simmer for 15-20 minutes.

Step 6: Add tortellini to the pot and cook

Cook according to package directions. It’s usually about 8 minutes.

Step 7: Add the spinach

Let the spinach wilt for a couple of minutes.

Step 8: Add heavy cream

Stir in the heavy cream and allow to simmer for a few minutes.

Enjoy your creamy tortellini soup!

Sprinkle some parmesan cheese on top, and a splash of white wine vinegar if you have it!

It goes well with wine, garlic bread, and a cesar salad.

  • 1 lb Italian sausage
  • 3 large carrots, chopped
  • 1 medium onion, diced
  • 3 tbsp minced garlic
  • 1 tbsp Italian seasoning
  • 1/3 cup flour

Instructions

  1. Heat a large pot on medium heat.
  2. Brown the Italian sausage. While it’s cooking, chop the onion and carrots.
  3. Remove the Italian sausage and set aside.
  4. Cook the chopped veggies for 4-5 minutes until the onions are transluscent. Add the Italian seasoning, garlic powder, and onion powder.
  5. Sprinkle flour on top of the veggies and stir. Allow to cook for about 3 minutes.
  6. Add chicken broth and canned tomatoes, and allow to simmer for 15-20 minutes.
  7. Add frozen tortellini to the pot and allow to cook for 8 minutes (or however long the package says).
  8. Add spinach and heavy cream and allow to simmer for another 5 minutes or so.
  9. Serve with a little parmesan cheese on top, or even a splash of white wine vinegar!

Notes

  • You can add 2 tbsp of tomato paste if you want a stronger tomato flavor.
  • Add a little bit of red pepper flakes for a spicy kick
  • You can use any tortellini you like! I bet mushroom tortellini would be delicious with this.
  • Add any veggies that you need to use up. It will come out delicious!
