Soup is one of my greatest loves in life.
And, I don’t know why, but making them really intimidated me for the longest. It turns out, they’re actually really easy to throw together.
In fact, it’s actually kind of hard to mess up soup. You mostly just want to let it simmer and have the flavors all come together.
You can add virtually anything to a soup, even this one!
This recipe calls for spinach, but you can absolutely substitute it for kale, or even zucchini.
I’ve made many different tortellini soups over the years. You can cook them in the Instant Pot, the crock pot, and of course, on the stove top.
Creamy tortellini soups with Italian meatballs is one of my favorites, but I’ll save that one for another day.
Today I’m sharing how I make make creamy tortellini soup with spinach and tomatoes.
recipe variations and flavor ideas:
- Use frozen meatballs instead of Italian sausage.
- Forego the tomatoes entirely and go for a simply creamy broth.
- Use up whatever vegetables you have that need to be used. It comes out amazing every time!
I love serving this soup with a little parmesan cheese sprinkled on top, and with garlic bread and a side salad.
