Description
Sausage and peppers is one of the best fast and easy weeknight dinner ideas around. Ready in about 20 minutes, this meal has been a go-to for our busy family of 5, and is easily customizable, keeping it fresh even when it’s in rotation in our meal plan often.

Ingredients
- Sausage of your choice
- 3 bell peppers
- 2–3 large onions
- 2 tbsp garlic powder
- 1 tsp onion powder
- Salt & pepper to taste
- Optional: Bbq sauce
- Optional: pick a carb of your choice: rice, pasta, cous-cous, potatoes, or enjoy as is.
Instructions
- Preheat the oven to 425°F.
- Slice onions, bell peppers, and sausage.
- Add ingredients to a foil-lined baking sheet and add oil and seasonings.
- Toss ingredients to coat.
- Bake for 15-20 minutes.
- Optional: Add barbecue sauce and put it back in the oven on broil for 1-2 minutes to caramelize. Or, serve with potatoes or over pasta or rice.
Notes
- This meal is great for busy weeknights, and can even be prepped ahead of time, making it even faster.
- Sausage and peppers are affordable and can easily be customized. Flavor ideas include:
- Barbecue – add some bbq sauce
- Tex Mex – add some frozen corn, cumin, oregano, and cayenne pepper
- Pasta – serve over pasta
- Rice – serve over rice
- Sausage and Potatoes – throw some diced potatoes on the pan as well before baking to add a carb
- Plain Jane – add some regular seasonings like onion powder, garlic powder, salt, and pepper and enjoy as is!
