Chocolate Moon Cake

A fudgy chocolate cake made with olive oil instead of butter, perfect for a solar eclipse party.

Ingredients
  

  • 3/4 cup Filippo Berio Olive Oil
  • 2 eggs
  • 1/2 cup strong brewed coffee or espresso
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 2 cups semi-sweet chocolate chips

Method
 

  1. Preheat the oven to 350°F.
  2. Spray a 8.5" springform pan olive oil spray.
  3. In a bowl, whisk the olive oil, eggs, coffee, sugar, and vanilla extract together.
  4. Add the flour and baking powder and stir together.
  5. In a microwavable bowl, melt the chocolate chips (stirring every 30 seconds until melted).
  6. Add the melted chocolate to the mixture and stir until well combined.
  7. Bake for 30-35 minutes until a cake tester comes out clean 1" from the side and doesn't come out clean in the middle.
  8. Allow it to cool before cutting.
  9. Best if served with ice cream or a tall glass of milk.

Notes

This will give the fudgy and gooey middle. Servings: 8-10 slices.
