Date & Olive Tapenade

Date & Olive Tapenade has to be the strangest combination I’ve ever heard of and yet when you put it in your mouth, your tongue will do a happy dance! You load your cracker or crostini with a nice spread of goat cheese first, then slather some tapenade on top.

Ingredients
  

  • 1 cup chopped dates
  • 1/3 cup water
  • 1/3 cup pitted Kalamata olives
  • 2 Tablespoons extra-virgin olive oil
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon drained capers
  • 1-1/2 teaspoons chopped fresh thyme
  • salt and pepper to taste
  • 4-8 ounces soft fresh goat cheese log
  • crackers or crostini
  • Optional 1/4 cup chopped toasted walnuts

Method
 

  1. Stir the dates and water in a small saucepan over medium-high heat until the water has evaporated (about 7 minutes).
  2. Place softened dates, olives, olive oil, balsamic, capers, thyme, salt and pepper in the blender or food processor and pulse until combined and spreadable.
  3. (Optional) Stir the walnuts into the tapenade.
  4. Prepare a serving platter with a bowl of the date olive tapenade, the log of goat cheese and crackers or crostini.
  5. To serve, spread some goat cheese and tapenade on the cracker and enjoy!
