Healthier Chicken & Waffles

A healthier take on the Southern classic of chicken and waffles, featuring baked crispy chicken and whole wheat waffles.

Ingredients
  

Baked Crispy Chicken
  • 1/2 cup white whole wheat flour
  • salt and pepper to taste
  • 1 egg white
  • 1/2 cup non-fat plain yogurt
  • 2 cups corn flakes crushed
  • 1.5 pounds Gold’n Plump® Boneless Skinless Chicken Breast Fillets
Whole Wheat Waffles
  • 2 cups white whole wheat flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 cups milk I used almond milk
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 tablespoon honey
  • 1/4 cup + 2 tablespoons olive oil

Method
 

Baked Crispy Chicken
  1. Preheat the oven to 425°F. Line a baking sheet with aluminum foil. Place an oven-safe cooking rack on top and spray with cooking oil.
  2. Prepare three bowls for dipping: one with flour, salt and pepper; one with the egg white and yogurt; and one with the corn flake pieces. Be sure to stir each bowl.
  3. Dip the chicken breasts into the flour mixture, followed by the egg white/yogurt mixture, followed by the corn flakes, coating evenly.
  4. Place the coated chicken evenly spaced out onto the prepared rack. Spray top tops of the chicken with cooking oil spray to achieve golden brown chicken.
  5. Bake for 20-30 minutes until thoroughly cooked and juices run clear.
Whole Wheat Waffles
  1. Meanwhile, make your waffles by doing the following: Preheat your waffle maker.
  2. In a large bowl, whisk together the flour, cinnamon, baking powder, baking soda and salt.
  3. In a separate bowl, whisk together the remaining ingredients.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spray the waffle maker with cooking spray and following the waffle maker’s instructions to make the waffles.
  6. Once the waffles and chicken are done, enjoy together with maple syrup.
