Healthier Chocolate Peanut Butter Sundae

A healthier version of a hot fudge sundae with homemade peanut butter ice cream and peanut butter syrup, topped with chocolate chips, peanuts, and whipped cream.

Ingredients
  

  • 1 14 ounce can full-fat coconut milk
  • 1/3 cup sugar
  • 1/3 cup creamy peanut butter
Syrup
  • 1/4 cup maple syrup
  • 1/2 cup creamy peanut butter
Topping
  • 1/4 cup mini chocolate chips
  • 1/2 cup roasted peanuts
  • chocolate fudge
  • whipped cream

Method
 

  1. Blend the coconut milk, sugar and peanut butter together. Pour into an ice cream machine and use according to the manufacturer's instructions. Pour into a container and freeze until ready to use. Note: If you don't have an ice cream maker you can pour the ice cream in a sandwich bag. Then, place the sandwich bag into a gallon sized bag filled with ice and rock salt. Shake until of ice cream consistency. Then pour into your container to freeze completely.
  2. Heat the maple syrup and peanut butter either in the microwave or on the stove until heated enough to become pourable.
  3. Scoop ice cream into cups and top with toppings and peanut butter syrup!

Notes

The ice cream can be made without an ice cream maker using the plastic bag method. Freeze the ice cream for at least 4 hours or until firm.
