Whole Wheat PB Girl Scout Brownies

A delicious combination of chocolate and peanut butter, these brownies use Girl Scout Peanut Butter Cookies (Do-Si-Dos) for an extra special treat.

Ingredients
  

  • 1/2 cup olive oil
  • 2 eggs
  • 1/2 cup strong brewed coffee I used decaf since I’m pregnant
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat pastry flour
  • 1/2 teaspoon baking powder
  • 2 cups semi-sweet chocolate chips
  • 1 8 ounce package Girl Scouts’ Peanut Butter Cookies (a.k.a. Do-Si-Dos)
  • 1/2 cup semi-sweet chocolate chips for sprinkling

Method
 

  1. Preheat the oven to 350°F. Cover a 9" x 9" pan in non-stick foil and spray with canola oil (for easy removal). Set aside.
  2. In a bowl, whisk the olive oil, eggs, coffee, sugar, and vanilla extract together.
  3. Add the flour and baking powder and stir together.
  4. In a microwavable bowl, melt the chocolate chips (stirring every 30 seconds until melted).
  5. Add the melted chocolate to the mixture and stir until well combined.
  6. Pour half of the brownie mixture into the prepared pan. Lay out a layer of the cookies.
  7. Pour the remaining brownie mixture on top covering all parts of the brownies. Sprinkle the chocolate chips on top.
  8. Bake for 30 minutes until a cake tester comes out clean.
