Description
This slow cooker pot roast is melt-in-your-mouth tender and absolutely packed with flavor. You can’t go wrong with this fast and easy crockpot weeknight dinner. Get it started in the morning and it will be ready to serve by dinner time.

Ingredients
- 3–5 lb chuck roast
- 2 tbsp vegetable oil
- 2 tbsp salt
- 1 tsp black pepper
- 1/3 cup flour
- 2 lbs potatoes, washed and cut into large chunks
- 5 large carrots, peeled and cut into large chunks
- 1 onion, cut into large chunks
- 3 stalks of celery, cut into chunks
- 2 tsp thyme
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 3 tbsp garlic (whole cloves are amazing in this recipe)
- 1/2 cup beef broth
- 2 tsp cornstarch
Instructions
- Coat the roast in salt and pepper, and then flour.
- Heat a skillet with vegetable oil on medium heat.
- Sear all sides of the roast until golden brown.
- Chop up all veggies and add to crock pot
- Add seasonings and beef broth to crock pot and mix.
- Add seared roast on top of the veggies, and set crockpot to cook on low for 6-8 hours.
- Once done, remove the meat and vegetables. Create a cornstarch slurry by whisking together 2 tbsp of water and 2 tbsp cornstarch. Once fully mixed, add slurry to the broth in the crockpot and whisk together until incorporated. This is now your savory gravy to pour over the roast and veggies.

- Cooking on low ensures a tender roast.
- Place the roast on top of the vegetables.
- Searing the chuck roast before adding it to the crockpot adds a ton of flavor.
